Pumpkin Recipes: Savory & Sweet

I tried this recipe last year for the first time while looking for more ways to incorporate pumpkin into our meal plan rotation and it was a BIG HIT! - Am I the only one who never thought to combine ground beef with pumpkin. I always think of pumpkin as sweet. . . in pie ;0) - But this is definitely a new favorite of ours and I know of a few friends who have fallen in love with it too.

If you like chili I have no doubt you'll enjoy this little twist with pumpkin & the best part is its supper simple and quick.

Pumpkin Granola Bars
I stumbled across this recipe while looking for more creative ideas for granola bars(which have become a staple around here especially in kids lunches). We made a batch Sunday stuck them individual baggies and keep them in the freezer. They were quick, simple to make(soon my kids will be making them themselves) and I know every single ingredient. -💓 


Ingredients:
1 cup Rolled Oats
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp pumpkin pie spice
1/4 tsp cinnamon
1/2 cup rice crispies(I used unsweetened coconut flakes here instead of cripies)
1/4 cup + 2 Tbs oat flour (I blend my own).
2 Tbs melted coconut oil or nut butter of choice
1/4 c raw agave or honey
2 Tbs brown sugar or stevia
1/4 cup pumpkin puree
1 tsp of pure vanilla
1/3 cup mini chocolate chips(optional, I do half and half)

Directions:
Line 8in pan with parchment paper Set aside. Stir all dry ingredients in large bowl. Whisk liquid ingredients together in separate bowl. Then stir dry into wet. Keep stirring until all the batter in mixed. Transfer to prepared pan and press down firmly. Chill until firm. They are firmer if you use coconut oil. - If you prefer baked cook on center rack 18min at 350 degrees F then press down firmly again & let cool completely before cutting.
